Birthday Cake Batter Protein Balls
3 scoops of Niyama Vanilla Plant Protein
* you need to use a really great tasting plant protein for these as it's the main ingredient
1 TBSP monk fruit table sweetener powder
4 TBSP coconut flour
2 TBSP coconut oil, melted
5 TBSP unsweetened plant milk (plain or vanilla)
1 TBSP vanilla
2 TBSP maple syrup (or leave out and double the monk fruit)
3 TBSP sprinkles for rolling (or use unsweetened shredded coconut, or leave plain)
Mix all the wet ingredients together in a large bowl
Add in the dry ingredients, mixing well into a dough
Roll into about 10 balls, and then roll each ball in the sprinkles or coconut
Refrigerate for 20 minutes before eating.
Store in an airtight container in the fridge.
