Matcha Coconut Energy Balls

Matcha Coconut Energy Balls - Niyama Wellness

Perfect for spring! These are easy to make, pretty to look at, and delicious to snack on.  And they only use 6 ingredients, none of which are hard to find.

I used Blume matcha powder which actually has some powdered coconut milk in it because I love coconut anything,  but they work well with any matcha.

Matcha Coconut Energy Balls

Ingredients

  • 1/2 cup + 2 TBSP (for rolling) unsweetened shredded coconut
  • 1/4 cup coconut flour
  • 1 scoop Niyama Vanilla Plant Protein
  • 3 TBSP coconut oil, melted
  • 2 TBSP maple syrup
  • 1 TBSP matcha

Directions

  1. Add all ingredients except the 2 TBSP shredded coconut to a food processor

  2. Mix until well combined, scraping down the sides as needed.  you may need to add a TBSP of water if it is too dry.  It will be a bit dry but should be rollable into balls

  3. Form into about 10 balls, rolling and pressing them.

  4. Roll each ball in the remaining shredded coconut and place on a parchment lined tray or plate.

  5. Refrigerate for 30 minutes to allow them to set before eating.
