Carrot Cake Protein Energy Balls

Ingredients

  • 1/2 cup shredded carrots
  • 1/2 cup walnuts or pecans
  • 2 TBSP nut butter of your choice -  almond or cashew are best as PB is a bit over-powering
  • 1 scoop Niyama Vanilla Plant Protein
  • 1/4 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 8 dates, pitted
  • 1-2 TBSP plant milk
  • 1/4 cup unsweetened shredded coconut (for rolling)

Directions

  1. Add everything except the coconut to a food processor and blend together

  2. Roll the mixture into 8 balls using your hands, then roll each bll in the shredded coconut.

  3. Place balls on plate or cookie sheet and refrigerate for 30 minutes so they firm up.

    Enjoy!!
